My Favorite Ratatouille Recipe.
1 ea Zuchinni
1 ea yellow squash
5 ea Roma tomato
1 bunch oregano, fresh
5 cloves garlic
Salt, to taste
Pepper, to taste
8 Tablespoons Extra virgin olive oil
1 cup Finely grated Parmesan cheese
Preheat oven to 350 degrees Fahrenheit. Rinse all the vegetables Thoroughly. Slice zucchini, squash and Roma tomatoes a quarter inch thick and place in separate mixing bowls. Mince the garlic and finely chop the oregano placing them in separate small bowls. Add equal parts garlic, oregano, salt, pepper and 2 tablespoons olive oil in each bowl that Contains the sliced vegetables, mix thoroughly. In a oval baking pan, add 2 Tablespoons olive oil to coat the dish. Shingle the vegetables nice and compact around the dish. Continue to shingle in the middle of the oval to fill the dish. Wrap dish in aluminum foil and bake for 30 minutes. Remove the foil and sprinkle Parmesan cheese on top. Baking for another 10 minutes uncovered. Serve and enjoy!
